I’m a raw dough lover. I make cookies for the dough, not to actually bake cookies, anyone else? And even though it NEVER tastes the same, I’m a sucker for anything trying to masquerade as cookie dough as well. Protein bars, shakes, snack bars, etc. I’ll try it.
Enter the protein cookie dough trend. Instantly captivating. There are so many recipes for this on the internet and they all LOOK so delicious! Vegan cookie dough that looks beautiful and has low sugar and amazing macros? Oh wait, tastes like absolute sawdust and water. UGH. I made recipe after recipe trying to find something that was healthy, but actually tasted remotely like cookie dough and it was a journey of fails, let me tell you what.
After much trial and tweaking, I have arrived. This recipe is my jam! It isn’t pure butter and sugar, but it’s pretty tasty. And it’s pretty healthy.
I will say that I DO NOT recommend vegan protein powder with this, I’m sorry, it just doesn’t taste the same to me. I use it sometimes in smoothies, but for this I definitely prefer Vanilla Whey. Your protein powder might be different than mine, so play with it.
Swaps and substitutions:
Feel free to get a little creative with your preferences, once you’ve tried this and you’re ready to put your own spin on it! Sometimes a blend of nut butters can be better than straight peanut for a more neutral flavor. RX Butter is NEXT LEVEL, but you might need to adjust the sweetener down accordingly.
I have made this with almond flour and with coconut flour and it didn’t do it for me. Chalky. But if you’re used to that then get creative with the flour too!
